I understand that the Plan 1799 consists of the Plan 999 for the unlimited data plan while the remainder represents the consumable for calls and texts (please correct me if I'm wrong).
My question is if it is possible to have a separate data plan sim card (purely for internet use only, no calls and texts, as such, no need to carry a mobile number) and another sim for my consumables?

I don't think that's possible.
The only suggestion I can think of is for you to apply for 2 separate lines.
For example, you can apply for globe's plan 499 for your phone and an internet only plan 999 for your USB stick/myfi device....
